Cucumber Relish
This simple side dish adds layers of flavour that compliment any curry.
Begin by slicing any combination of the fresh ingredients and combine in an appropriate mixing bowl. Predominately cucumber and/or tomato, as much or as little as you like of the remaining ingredients.
Dress the relish with sweet vinegar pickling liquid, alternatively you could use the pickling liquid from a jar of our pickled fennel.
That’s it!
Garnish your curry with this relish to add another layer of flavour and cool the palette.
Ingredients - any combination
50ml Sweet Vinegar (Combine 30g Sugar and 30g Vinegar, bring to the boil to dissolve the sugar and allow to cool).
1 Cucumber, sliced lengthways then into smaller pieces
3cm piece Ginger, sliced finely, then sliced into matchsticks
1 Tomato, cut into small chunks
1 Chilli, deseeded & sliced finely
1/2 Red Onion or 1 Eschallot, finely sliced
3-4 sprigs Coriander, picked or roughly torn
Pickled Fennel is a great cheeky extra. Pickled Ginger if you’re feeling extra indulgent. Mustard greens are really delicious too if you can get your hands on them.
