500ml - Serves 2 to 4 people as part of a meal.

Massaman, a crowd favourite. A fusion of Indian spice and fresh Thai ingredients such as lemongrass and coriander root.

Flavour profile - Mild chilli, heavily spiced, slightly sour, rich & creamy

Please keep me refrigerated - bring to boil before serving.
You can also freeze this sauce for up to 3 months.
To defrost, simply move the sauce from the freezer to the fridge and allow to naturally defrost over night.
Consume within 5 days of defrosting for optimal freshness.

Suggested serving -
In the oven, roast pumpkin, potato and cauliflower until soft and caramelised. Bring the curry sauce to the boil on the stove then add the roasted vegetables. Continue to simmer for a few minutes. Preferred meat for this curry is lamb or beef. Green vegetables and leafy greens can also be stirred through to finish.

Serve over jasmine rice and garnish with cucumber relish* and plenty of fresh herbs. Coriander and peanuts match these flavours.

*Cucumber relish -
This simple and delicious addition is designed to accompany any curry and enhance its flavour.
In a bowl combine any combination of freshly sliced cucumber, ginger, tomato, chilli, red onion and coriander. Dress the relish with the vial of sweet vinegar.

Ingredients -
Red onion, garlic, galangal, lemongrass, dry chilli, coriander root, coriander seed, cumin, cardamom, cassia, clove, anise, fish sauce, oyster sauce, tamarind, coconut, soy*
