500ml - Serves 2 to 4 people as part of a meal.
Curry with a bang. Well rounded spice with full depth of flavour, compliments of galangal - a woody variant of the ginger family.
Flavour profile - Spicy, slightly salted, lightly spiced
Please keep me refrigerated - bring to boil before serving.
You can also freeze this sauce for up to 3 months.
To defrost, simply move the sauce from the freezer to the fridge and allow to naturally defrost over night.
Consume within 5 days of defrosting for optimal freshness.
Suggested serving -
Bring the curry sauce to the boil, add any combination of vegetables (eggplant, snake beans, corn, roast potatoes & onions) and continue to simmer until tender. Preferred proteins for this sauce are beef, lamb or pork. Green vegetables and leafy greens can also be stirred through to finish.
Serve over jasmine rice and garnish with cucumber relish* & plenty of fresh herbs. Thai basil & coriander are a perfect match for this curry.

*Cucumber relish -
This simple and delicious addition is designed to accompany any curry and enhance its flavour.
In a bowl combine any combination of freshly sliced cucumber, ginger, tomato, chilli, red onion and coriander. Dress the relish with the vial of sweet vinegar.
Ingredients -
Garlic, red onion, galangal, coriander root, dry long red chilli, birds eye chilli, lemongrass, coriander seed, cumin seed, white peppercorn, coconut cream, palm sugar, fish sauce, oyster sauce, soy sauce*
